WEA Morning Tea: Norwegian Apple Bake


This simple recipe is a good standby dessert and one of our more popular morning tea treats. Usually, you'll have all the dry ingredients in your pantry, and you can use any apple, pear, plum, or even berries, and it will turn out fantastic.


Preheat the oven to 175ºC; butter a shallow ovenproof dish, 30cm in diameter.


2 eggs

1 1/4 cup sugar

113 g butter

2/3 cup milk

4 apples, cored, peeled, and sliced

1 cup plus 2 tablespoons self-rising flour

1/2 teaspoon nutmeg OR cinnamon


Put the eggs into a large bowl, add 1 cup of the sugar, beat until stiff and creamy. Put the butter and milk into a saucepan and heat gently until the butter has melted. Meanwhile, arrange the apple slices in the buttered dish.


Gradually add the hot milk and butter to the egg mixture, beating well. Fold in the flour to make a smooth batter. Pour the mixture over the apples, then sprinkle with the remaining 1/4 cup of sugar and choice of spice. Note: you can pour the batter into the pan first and add the fruit on top if you prefer.


Bake for 20-25 minutes until puffed and golden. Serve hot or cold. Enjoy!
